Mace Powder

Mace Powder is from the Nutmeg Tree a tropical evergreen tree native to Indonesia and cultivated in the West Indies, South Africa, the Molucca Islands, and other tropical areas. The brown, wrinkled oval fruit contains a kernel which is covered by a bright red membrane. Nutmeg is not a nut, but the kernel of an apricot-like fruit. This is an arillus, a thin leathery tissue between the stone and the pulp; it is bright red to purple when harvested, but after drying changes to an amber

Properties/Uses - Flavoring agent, stimulant and tonic. This herb help digestion in stomachic weakness, but if used to excess may cause over-excitement. Mace increases circulation and animal heat. It has been employed in pestilential and putrid fevers, and with other substances in intermittent fevers, and enter into the composition of many French medicaments. This product is less used, still in Arab countries, Iran and Northern India, where both nutmeg and mace appear in delicately-flavored meat dishes. In Western cuisine, they are more popular for cakes, crackers and stewed fruits, and add a sweetness and warmth to both sweet and savory dishes. Mace is known to have a more delicate flavor for lighter dishes
